The Lake Erie region of Western New York state has always been active with wineries but in recent years, many wineries in and around the Niagara Escarpment have started up. A short trip across the river into the neighboring country, Canada, offers many fine wineries as well. Around WNY, 43 wineries and tasting rooms are available. Just to mention a few to visit are Niagara Landing, Arrowhead, Johnson Estates, Mazza, Willow Creek, Black Willow and Schultz. Their wines and many more fine NY state wines are available at our store every day.

Growing and Harvesting Is Just The First Steps
White wines are usually made from “white” grapes with a greenish-gold skin. Red wines and pink wines aka Rosé or Blush are from dark purple or blueish-black skinned grapes. During the growing season, the grapes’ natural flavors and sugars increase, or simply put, they ripen. The soil, climate, amount of water, sun, heat and minerals all effect the flavors and quality of the wine produced.
The grapes are picked at the optimal time and readiness. The longer the growing season, the deeper the flavors can develop. The perfect harvest time depends on ripeness but extreme heat, rain, or other extreme weather patterns at the time of harvest can greatly effect an otherwise good growing season.
Once the grapes are picked and inspected, the vinification process begins.
White Wines vs Red Wines, the Wine Making Process Is Different.
White Wines: The grapes are pressed to separate the juice from the skins, stems, and seeds BEFORE fermentation. The grape juice is placed into barrels or tanks with yeast. This is the fermentation process. The yeast converts natural sugars into alcohol. After a few days or more of fermentation, the juice will turn into wine.
Red Wines: Stems are usually removed as stems are believed to impart bitter flavors. Then the grapes are lightly crushed, just enough to break open the skins to allow the yeast to interact with the sweet grape juice. Juice, skins and seeds, go into a fermentation tank along with yeast. The yeast converts natural sugars into alcohol. The skins steep in the juice to color the wine red. After fermentation, the grapes are pressed to separate the skins and seeds from the new wine.
White and Red wines may be aged in oak barrels or stainless-steel tanks for a few weeks, months or longer. This allows the flavors to harmonize and mellow. Stainless steel is neutral and does not impart flavor. Oak, especially new oak, can impart smoke, spice, vanilla and other rich flavors.
It’s All In The Bottle
Finally, the wine is bottled. Hundreds of clanking bottles is a noisy process as bottles move down the conveyor belt to the individual stations of washing, filling, corking, labeling, capsuling, final inspection and packing.

Some wines are not affected by vintage, others most certainly are. For the most part, the wines we drink every day – the under $14 a bottle range are not really effected by vintage even if they have a vintage denoted somewhere on the bottle. The wines are produced in an even style that really does not change from year to year. These wines become your “favorite go-to” bottles; like 90+ Cellars, 19 Crimes, Mondavi Vintners Select, Apothic and more. These wines are produced in a style you’ve come to enjoy and you expect them to stay relatively the same.
A vintage wine reflects grapes grown and harvested in a single year. A vintage wine is one made from grapes from all, or mostly all, from the same year. But, beyond that, what makes a good vintage? It’s the weather. Weather that is extreme, either too hot or cold, too wet or too dry, will usually hurt the growing process. As with all plants, every grape variety requires a particular climate and growing temperatures. Severe weather stunts or harms this process and the quality of juice is effected.

Most vodka is made from potatoes or the grains of rye, wheat or corn. Svedka Vodka is made out of wheat. Titos Vodka is made out of Corn. Chopin Vodka is made out of Potatoes. Whatever the main ingredient, each must be broken down, mixed with water and heat applied. This combination turns the starches into fermentable sugars. The final liquid is drained, commonly called the “wash”. Next, the wash is fermented which lasts a few days. After fermentation, the wash is transferred to stills for distillation.Distillation can be a long process of multiple runs through either a pot or column still, or a combination of both. Filtering is also an important part of the process to further remove impurities. Many of the highest quality vodkas repeat this process multiple times. Double Cross Vodka from Slovakia is seven times distilled and filtered to create a bright, yet smooth vodka with a soft, round mouth feel.

Ketel One is an example of Fine Craftsmanship Vodka
The finest ingredients, exacting standards and refined processes are practiced by the highest quality producers. Their attention to every detail strive to create a delicate balance of flavors and characteristics. Ketel One Vodka, made in the Netherlands, starts with 100% GMO-free Winter Wheat from Europe. They produce a fine wheat mash that creates an ultra-wheat spirit with high purity levels. David Marsland of Drinks Enthusiasts 2 details the Ketel One process. “After fermentation, the mash goes through the column distillation process. A part of the wheat spirit is re-distilled in small batch copper pot stills, including the original coal-fired Distilleerketel #1 or Pot Still Number 1. After discarding the heads and tails of the pot still distillate, the remaining hearts, including those from Pot Still Number 1, are individually filtered to create a Master Pot Still Blend. The Master Distiller oversees the marrying of a portion of the Master Pot Still Blend, a portion of the ultra-wheat spirit and water to create the final product. 16 pureed Strawberries, fresh preferred
12 pureed Pineapple chunks, fresh preferred
1/2 cup Cream of Coconut
1 cup Pineapple juice
2 tablespoons lime juice, fresh preferred
1 cup Strawberry Vodka, Three Olives Strawberry
1 cup Coconut Rum or Vodka, Cruzan Coconut
Sugar, 1-2 T, if desired
In a large bowl or pitcher, mix together all ingredients. Taste for sweetness. Add sugar, if needed. Pour into popsicle forms. Place in freezer for 2 hours. Insert popsicle sticks. Freeze overnight.
Pain Killer Happy Hour Pop-Tails
1 cup Gold Rum, Bacardi Gold Rum
1 cup Pineapple Vodka or Rum, Skyy Pineapple Vodka
1/4 cup Cream of Coconut
2 cups Orange juice, fresh squeezed preferred
1 cup pureed Pineapple chunks, fresh preferred, or Pineapple juice
Sugar, 1-2 T, if desired
In a large mixing bowl or pitcher, mix all ingredients together. Taste for sweetness. Add sugar if needed. Pour into popsicle forms. Place into freezer for 2 hours, Insert popsicle sticks. Freeze overnight.
Peaches Alexander Cocktail on a Stick
2 cups pureed Peaches, ripe and fresh preferred
1 cup Peach Schnapps or Vodka, DeKuyper Peachtree Schnapps
3/4 cup White Cream de Cocoa (in-store availability)
2 cups vanilla bean ice cream
1/2 cup milk, whole or 2% recommended
Sugar, 1-2 T, if desired
In blender, blend ice cream, peaches and milk. Remove from blender base. Add liquors to ice cream mixture. Mix by hand. Taste for sweetness. Add sugar, if needed. Pour into popsicle forms. Place in freezer for 2 hours. Insert popsicle sticks. Freeze overnight.
**Be creative with your popsicle containers. Try using shot glasses, small juice glasses or cute and crazy small containers as alternatives.
